Cooking with broth
Creamy Pasta
A rich, creamy pasta cooked directly in chicken broth with garlic, parmesan, butter, and a little cream.
25 minutesChicken Broth
Ingredients
1–2 tbsp olive oil
6 minced garlic cloves
Pinch of red pepper flakes
1.5 cups small pasta
1.5–2 cups chicken broth
1 cup heavy cream
2 tbsp butter
1/3 cup parmesan
Salt and pepper to taste
Parsley for garnish
Instructions
Heat a pan on medium-low heat and add the olive oil. Add the minced garlic and red pepper flakes. Cook for 1–2 minutes, being careful not to burn the garlic.
Add the small pasta to the pan and toast for 1–2 minutes.
Pour in the chicken broth and bring to a simmer. Use closer to 2 cups depending on your pasta shape. Simmer until the pasta absorbs almost all the broth, about 10–15 minutes. Stir every couple of minutes so the pasta does not stick.
When the pasta is almost cooked and most of the broth is absorbed, add the heavy cream. Mix well, return to a simmer, and continue cooking until the pasta reaches al dente. Add splashes of chicken broth as needed.
Add the butter, parmesan, salt, and pepper. Mix well, top with parsley if desired, and enjoy.
